Creamy Coconut Chickpea Curry

Ingredients
- 1 can chickpeas (rinsed)
- 1 onion
- 2 tomatoes
- 1 cup coconut milk
- 1 tsp curry powder
- Spinach (handful)
- Salt & oil
Steps
- Sauté onion until soft; add tomatoes and curry powder.
- Add chickpeas and coconut milk; simmer 10–12 minutes.
- Stir in spinach to wilt. Serve with rice.
